1. Pumpkin buns with salted maple butter
Of course they are delicious. But these buns are also such a treat to make this time of year. We add aniseed to the dough, but pumpkin spice would be the classic choice. Just decide for yourself which spices to add. The salted maple butter is the easiest thing in the world to make and it’s a perfect match with the buns.
2. Apple cider bread
What we like about this recipe is the tenderness and texture of the crumb, it gives the apples something to hold on to. We wouldn’t recommend adding any other flavor to the recipe. It’s all about the apple in this one! It’s a delight with homemade pumpkin soup or dipped in a cheese fondue with French cheese like Camembert or Mont D’Or from the Jura region. 3. Fluffy overnight pumpkin buns
‘Tis the season to use pumpkin, so here is another bun recipe containing pumpkin! It really does something wonderful to the texture of the buns. We make and add our own pumpkin puree. Our method is included in the recipe.
4. Autumn Muffins with apple and cranberries
Use tart apples for this recipe, and make sure your spices are fresh or grind them yourself to get the most fragrant and delicious muffins. Don’t forget the cinnamon sugar topping for that lovely crunch.
5. Our fruit & nus without the ‘kletzen’ brot
My father famously said that he liked this bread better than pie. This loaf is worth the effort. It has its sweetness, but the taste is much more complex, with the rye and nuts and spices. Sliced thinly and paired with good cheese it is a very satisfying thing to eat.
6. Dutch apple pie with a French twist
With this recipe we want to combine the best of two worlds: The buttery, sandy dough of the Dutch ‘appeltaart’ with the filling of a pie from Normandy. So, no cinnamon this time, instead you get the long lingering scent and taste of wonderful Calvados (‘apple brandy’).
7. Rondo bites with quince filling
A few years back we planted a quince tree, and this year we had our first real harvest. The quince jelly works really well in these rondo bites, but feel free to use any jam, jelly or nut paste that you like best. Or make miniature apple pie versions with tiny pieces of baked apple with cinnamon.
8. Loaf with toasted walnuts, figs and prunes
The toasting of the walnuts, really brings out the flavor, so make sure you do not skip that step. What do we like so much about this recipe? The smell, the texture, the nice bite, the taste of that little bit of whole wheat but not too much, the pockets of sweetness from the dried fruits. A fall and festive favorite for us.
9. Speculaas gingerbread with rye and buttermilk
This recipe will hopefully appeal to anybody who is a fan of speculaas (speculoos), gingerbread and pumpkin spice sweet baking. These spices are all part of the same family. Although they come in different compositions and some ingredients are left out or put in, they are all part of similar and very popular baking rituals and traditions. The aroma’s wafting from your oven will make everybody come in from the cold.
10. Walnut brownies with chocolate toffee glaze
The walnuts in the recipe are not only added because they are good for you and contain healthy omega 3 fatty acid. If you like walnuts combined with intense chocolate flavor and you love a fudgy texture and indulgent glazing as a bonus, just make these and be happy!
