Yes you are right Alain. Despite its name, allspice is not a blend of spices. It is a single ingredient: the dried, unripe berry of the Pimenta dioica tree, native to the Caribbean and Central America. In Holland we call it Piment. It has a really pleasant and interesting taste, a combination of cinnamon, nutmeg, pepper and a hint of clove maybe. We also love to use it in stewed pears and glühwein.

On the tin we use it says; 43% paprika, coriander seed, black pepper, 10% cinnamon, cumin seed, cardamom, onion, garlic, nutmeg, cloves, cayenne pepper.

It refers to all of them. Which spices in specific were used? Cinnamon? Cardamom? Ginger? Turmeric? Allspice? Nutmeg? Coriander?

Is it the 5 spice mix? The 7 spice mix? The 9 spice mix?

If I go to a Middle Eastern grocery store and ask for baharat they will show me where the spice isle is and ask me which one in particular I am looking for. So just calling it baharat isn’t helpful. Which baharat are we talking about?
