You will find me singing in the kitchen when baking cookies (‘koekjes’ in Dutch). It is so much fun. And these cookies are so yummy! I know this because people fall silent in the middle of conversation when they bite in one. Try for yourself if you don’t believe me. These cookies are delicious simple. Just (and I will keep going on about this) use high quality and fresh ingredients. It makes al the difference…and yes, your flour should be fresh too. Have you ever tasted the difference between cheap white flour and fresh organic flour? One is ‘blehhh’ and the other one is ‘wow, this comes from plants’. Good ingredients make good cookies!

Ingredients for the Koekjes
150 grams self raising flour
125 grams soft butter
150 grams cane sugar
70 grams oatmeal
1/2 tsp vanilla extract
50 grams white chocolate in little pieces (I use ‘Green & Black’ organic)
50 gram blue raisins
pinch of salt
1 egg (pref. organic)
This is how you make Maison Dorré cookies
Preheat the oven at 175 degrees C. Put the flour and salt trough a sieve and add the oatmeal. Put butter, sugar and vanilla in a bowl and mix well. Then add the egg and mix again. Put flour and oatmeal in with the butter mixture and stir until combined. Then add chocolate and raisins. Make little teaspoon heaps on a baking tray covered with a baking sheet. Leave a few centimetres space between each heap. Press them down a little with the back of a spoon. Bake the cookies golden brown in approx. 15 minutes. Leave to cool a few minutes and then transfer them onto a rack. Tastes delicious while still a bit warm.
Variations on a cookie: add fresh espresso coffee, dark chocolate, milk chocolate, dried cranberries, chopped pistachios etc.
